There has been a lot of discussion on this subject at http://www.CarAudioForum.com

One of the preferred motherboards is the VIA EPIA Micro-ITX.
It is just slightly longer than a stick of SDRAM, uses a VERY low power consuming processor, which is based on the Cyrix/VIA Samuel C3.
